The Flavor of Early Harvest
We harvest our Athinolia olives early to preserve their naturally occurring antioxidants that contribute to Ygeia's vibrant character and distinctive peppery finish. The result is an olive oil with fresh green aromas, layered complexity, and a gentle lift of pepper.
Athinolia — The Spartan Variety
Athinolia is one of Greece's rarest and most respected olive varieties, native to the Laconia region of the Peloponnese. Naturally low in acidity and rich in polyphenols, it is prized for producing olive oils with exceptional freshness, elegant balance, and a distinctive peppery finish.
Our early-harvest Athinolia reflects the unique character of our family grove in Logkanikos, delivering vibrant flavor and naturally occurring antioxidants in every bottle.

Our Grove in Logkanikos
At 2,300 feet in the foothills of the Taygetos mountains, our Athinolia olive trees grow in rocky, mineral-rich soil shaped by cool mountain air and long Greek summers. For generations, our family has cared for this land by hand. That same mountain climate continues to shape every harvest, giving our olive oil its distinctive freshness, balance, and character.
